Why do they not let students know they are going to test them?

I have seen in many interview videos that they do not let the candidate know they are going to test them. Is there any specific reason?

It is a good way to find out whether you can bluff successfully. The trick is, that they don’t just lay out the questions, but also you have a chance to discuss topics that you were briefed on beforehand.
I don’t think there is any specific reason. There are many reasons why a candidate would be better off knowing what to expect.
The company could be very selective and the interview might include something like the following (randomly chosen, could be anything):

Discuss something related to health, and you are pregnant.
Discuss some of the answers you gave on a similar test a few years ago.

Obviously the company is only interested in the ability to bluff. A good candidate will know that at this point in the interview, the questions will be about the way they handle a situation that is a reasonable worst case scenario.
In other cases the interviewer will be more open with questions. But if they just throw a question at you and expect a correct answer, this could be a sign of bad preparation or your lack of interest.
